    WHITE BEAN CHICKEN SOUP

    Cooler weather is finally in Texas! Nothing says ‘cozy’ like tasting a warm bowl of soup or in this case, White Bean Chicken Soup on the couch while watching your favorite holiday movie. If you haven’t had time to enjoy a warm bowl of soup, here’s my quick and easy White Bean Chicken Soup recipe that will have you wanting to make more! 

    Ingredients

    2 Lbs. Rotisserie Chicken from Kroger or your local grocery store
    1 Can of white beans
    1 Can of Corn
    4 Cloves of Garlic
    2 Jalapeños 
    1/2 Cup of Onion
    1 Cup of Chicken stock, unsalted
    1 Tablespoon black pepper
    1 Tablespoon salt
    2 Tablespoons Olive oil
    1 Tablespoon Cumin
    1/2 Cup of Cilantro
    1 Stalk of Celery
    1 Hand full of Tortilla Chips

    Serves: 3-4 people

    Instructions

    1. In a large pot sauté onions and garlic on medium heat until golden brown.

    2. Add Cumin (see where I got my spice labels in my How to Re-Organize Your Spices blog post here!)

    3. Rinse the canned corn and canned white beans then add into pot along with celery.

    4. Pour the chicken stock.

    5. Shred the rotisserie chicken then add to pot.

    6. Add salt and pepper.

    7. Cover the pot and let it simmer for about 10-15 for the flavors to incorporate. Add more chicken stock if needed.

    8. Serve in a small bowl and garnish with cilantro, jalapeño and tortilla chips – enjoy! 

    A Tasteful Tip

    You can add canned green chiles for more flavor.
